The lamb shoulder and pickled onion at Back Forty
Lamb Demo:East Village farm-to-table restaurantBack Fortyis really bringing the farm to your table on Saturday, when Chef Shanna Pacifico will conduct a lamb butchering demo. You'll not only learn the probably useless (but you never know) ways in which you can butcher a lamb, but Pacifico will also share lots of tips on how best to prepare different cuts. Once the class is over, students will repair to the dining room to enjoy a four-course, family-style dinner featuring dishes such as Lamb Kibbe Tartare, Smoked Lamb Croquettes, Ancho Pepper Roasted Lamb Shoulder and Herb Marinated Bone-In Leg of Lamb.
The demonstration starts at 3:30 p.m. and lasts until 6 p.m., with the"feast"lasting until 8. The whole thing costs $130 and includes food, beverages, tax and tip.
